The vegan turmeric broth soup is a naturally healing, comforting, and soothing soup recipe. It is a plant-based recipe. It is a combination of olive oil, ghee, onion, fresh ginger, garlic cloves, turmeric powder, mustard seed, cumin, coriander, salt, water, veggie broth, cayenne, lime or lemon juice, basmati rice, quinoa, pasta, little dry lentils, cooked garbanzo beans, diced fire-roasted tomatoes, cooked chickpeas, dry noodles, chopped cauliflower, handfuls of chopped kale, and a squeeze of lime.

Ingredients:

Chickpea cauliflower kale noodles:

Squeeze of lime
Handful of chopped kale: 2 large
Chopped cauliflower: 1/2 cups
Dry noodles: 4 ounces
Cooked chickpeas: 1/2 cup

Mustard seed: 1/4 tsp.

Onion: 1

Olive oil: 1 tbsp.

Coriander: 1 tsp.

Cayenne: 1/2 tsp.

Salt

Cumin: 1 tsp.

Cider vinegar: 1 tsp.

Fire-roasted tomatoes: 1

Gentile: 1/2 cup.

Basmati rice: 1/2 cup.

Garbanzo: 1 cup.

Variation:

Chopped kale: 2

Lime of squeeze.

Noodle: 4 oz.

Chickpeas: 1-2 cups.

Cauliflower: 1-2 cups.

Instructions:

Sauté onion in olive oil over medium heat for 5 minutes, or until aromatic and brown, in a big heavy-bottomed pot or Dutch oven.

Add the fresh turmeric, ginger, and garlic; sauté for two to three minutes, or until the garlic is aromatic and golden.

Sauté for one to two more minutes after adding the mustard seeds, cumin, coriander, and optional turmeric powder.
Add the salt, stock, and water. Heat through to a simmer. Add some citrus or vinegar.

To taste, adjust the salt, lime, and spice amounts. You will now have a tasty foundation to which you may add whatever you wish. For later usage, you may also freeze or chill this in portions.

Add gradually (4 ounces of dry pasta), keeping in mind that uncooked pasta and beans can double or triple. Consider and be reasonable about the cooking times for each item you add.

Notes:

Remember that when you heat the broth uncovered for an extended period, the taste and salt content may intensify due to reduction; thus, you might need to add more water to lessen the strength. Taste and adjust the broth’s consistency.
